Kappo means "to slice and cook", a traditional elite Japanese culinary style similar to kaiseki albeit less formal. Here, customers and chefs sit face to face, with just the counter between them. It's this mutual interaction that makes the culinary experiences of Kappo cuisine memorable.
As in Japan, at KAPPO in Cascais, everything happens around the counter. From there, all the movements of a perfect choreography are on display, and every detail matters.
